out BIOSCANNING tests to assess their cleaning standards. These visits are unannounced, to keep their staff on their toes!

Since working with Itsu, In House have carried out bespoke, hands-on training at every shop and restaurant, to help staff to really see the most effective way to clean. By using BIOSCANNING, which gives results straight away, Itsu staff can see for themselves the most effective way of cleaning. 
As a group, Itsu shares best practice by developing cleaning methods and regimes which really work in small, busy kitchens. Best practice is usually spread by area managers, who receive copies of every report, so they can see any group lessons to be learned. In 2008 Hazel worked together with Itsu staff to develop specific cleaning regimes for complicated sushi making equipment– using BIOSCANNING tests to confirm the best methods, and putting it together in a ‘How to Clean…’ guide.
